What is Vietnamese Jerky?
What comes to mind when you think of beef jerky?
When most people think of beef jerky, they think of something salty, smoky, and often chewy. Quick to grab at a gas station and convenient to fuel you up on the road. It’s usually pretty dry and eaten on the go.
That’s not the jerky I grew up with.
Vietnamese jerky (khô bò) takes on a completely different experience. It is bold, aromatic, and meant to be enjoyed slowly. It’s often shared at social gatherings where we're celebrating, connecting, and making memories among family and friends.
My family is from Southern Vietnam and the jerky reflects the way we cook and eat there: bold yet beautifully balanced between sweet, savory, spicy, and the unmistakable brightness of citrusy lemongrass. The texture is tender and moist, and because it’s so flavorful, it’s very versatile too! You might find it shredded and tossed in a green papaya salad, layered between bread (bánh mì), or served with other drinking snacks among friends (nhậu).
